Billy Walker's renowned expertise in wood management is the hallmark of GlenAllachie. He personally evaluates casks from around the world, favoring premium Pedro Ximénez and Oloroso sherry puncheons. Fermentation spans over 160 hours, resulting in a rich, muscular spirit that stands up beautifully to heavy sherry cask maturation.
